Hillersden Reserve Fume Blanc 2017

This is a fairly worked but solid example of an oak-aged Sauvignon. Partially wild fermented in a combo of oak barrels, it leads with subtle notes of green beans and flower stalks, followed by papaya, grapefruit and pineapple rind fruit and honeysuckle. The palate is the focus, though, and while acidity soars above the rest, it's soon grounded by a creamy yet powdery texture and a lift of tangy fruit that flows into a long finish.
